Texas Hummus (Hummus bi Golly)

Other Texas hummus recipes simply substitute black-eyed peas for chickpeas, while leaving in exotic ingredients like tahini. I wanted a truly regional recipe, something that could be made with ingredients from Food Lion.

  • 1 15-oz. can black-eyed peas, drained
  • 2 Tbsp. mayonnaise*
  • 1 tsp. cider vinegar
  • 1-2 tsp. Crystal hot sauce
  • 1/4 tsp. cumin
  • 1/8 tsp. garlic powder
  • Salt and pepper, to taste

Combine all ingredients in a blender or food processor and puree until smooth. Serve with corn chips.

*I use grapeseed oil mayonnaise. Regular mayo will work (and satisfy the Food Lion requirement), but tofu mayo won't.
